Slice of Heaven
I am a total oat fiend – I just love them, whether in porridge, granola, flapjack or oatcakes – you name it, if it’s got oats in it, then it’s top of my list. My favourite muesli slice recipe is actually very similar to this one, but with an egg and flour in it. As flour is like gold dust at the moment, I thought I’d try without. Depending on your preference of dried fruit, you can swap – for example if you’d rather have apricots and dates, then give that a whirl. Equally if you’d prefer honey rather than syrup, use that instead.
Muesli Slice
50g Raisins
50g Dried Cranberries
50g Sunflower Seeds
50g Pumpkin Seeds
200g Rolled Oats (large ones)
100g Butter
50g Brown Sugar
90g Golden Syrup
Pinch of Salt
Pre-heat the oven to 160 degrees on bake, line a baking tray with greaseproof paper (about 20cmx30cm.
Put butter, sugar and syrup (or honey) in a saucepan over a medium heat – bring to a simmer, reduce heat and cook for a couple of minutes.
Add the fruit, seeds, oats and salt; stir to combine. If it seems a little sticky, then add a few more (about 20g) rolled oats, or mix it up and smaller oats.
Put into baking tray and flatten with the back of a spoon. Bake for around 20-30 minutes or until golden.
Cool, then put in the fridge to cool – take out and slice when semi-cool, then put back in the fridge until hard. I found it was a bit crumbly until it was properly set, but once it had been in the fridge for a couple of hours it was good to go. And go it did!
